Blackberry and Almond Rolls

It is September already! Autumn is my favourite time of year and I always associate blackberries with September. I love going blackberry picking and this recipe is a delicious way of using them. These soft rolls are sweet and sticky as they are filled with a blackberry filling and topped with a glace icing and flaked almonds for that perfect crunch. Enjoy!

The Recipe: Blackberry and Almond Rolls 

Dough:

  • 225g strong white bread flour
  • 7g sachet dried yeast
  • 25g caster sugar
  • 1/2 tsp salt
  • 75ml milk, warmed*
  • 1 egg, beaten (keep some back to glaze rolls)
  • 25g butter, melted*
*can be swapped for dairy-free alternative 

Filling:
  • 200g blackberries
  • 2 tbsp granulated sugar
  • 1 tsp corn flour 
Decoration:
  • 50g icing sugar 
  • 10g flaked almonds, toasted

In a bowl, combine the bread flour, yeast, sugar and salt together. Make a well in the middle and add the warmed milk, three-quarters of the egg and the melted butter. Bring together roughly with your hands before placing on a floured work surface. Knead for 10 minutes until smooth and elastic. Place back in the bowl and cover. Put in a warm place to prove for 1 hour or until doubled in size. 

Make your blackberry filling by combining the blackberries with the sugar and corn flour, set aside. 

Once proved, knock the air out of the dough and transfer it onto a floured work surface. Roll the dough into a 20x30cm rectangle and spread with the blackberry mixture. Roll the dough up along the longest side to form a Swiss roll shape. Cut the ends off and divide the rest into 9 equally sized rolls. Place them into a heat-proof oven dish. Leave to prove again for a further 30 minutes. 

Preheat your oven to 200℃/180℃ fan/gas mark 6. Brush the rolls with the remaining egg and bake for 10 minutes before reducing the oven to 180℃/160℃ fan/gas mark 4 for a further 10 minutes. 

Once baked, leave to cool whilst you make the icing. Sieve the icing sugar into a bowl and add water a teaspoon at a time until a thick icing is formed which can be drizzled on top of the rolls. Ice when completely cold and top with flaked almonds.
