Butternut Squash and Lentil Soup



Hello there!
It is starting to get a bit colder now and autumnal so I thought a simple soup recipe would be ideal for a weekend lunch. I've always liked butternut squash for its sweet flavour and bright orange colour and it goes really well in this soup. It also has lentils in it to make the soup thicken and filling, great for cold weather. I decided to add a little curry powder to the soup to give it a warming kick.

The Recipe: Butternut Squash and Lentil Soup

Serves 3-4
  • Small butternut squash
  • 2 garlic cloves 
  • 1.5 litres vegetable stock
  • 100g red split lentils 
  • 1-2 tsp medium curry powder
  • Salt and pepper 

Chop up the butternut squash into cubes with the flesh removed and crush the garlic cloves. In a large saucepan, fry the garlic with a little vegetable oil for a few minutes and then add the butternut squash.
 Add 1.5 litres of vegetable stock (made from a stock cube is fine) and bring to a simmer. Add the lentils and boil for 10 minutes then lower the temperature to a simmer for 15-20 minutes. 
The lentils should be soft and the butternut squash tender. Use a hand/stick blender to blitz the soup so it is smooth and thickened. Add a little curry powder and season to taste. Serve with fresh bread.
