Apple and Caramel Crumble Slices
Hello there!
Apple crumble is a perfect autumnal dessert so I wanted to use it as inspiration to create a bake. These crumble slices have a base of rich buttery shortbread, layered with a mixture of apple and caramel and topped with crumble. A perfect treat for Halloween or bonfire night! Enjoy!
The Recipe: Apple and Caramel Crumble Slices
Makes 6For the Shortbread:
100g plain flour
35g caster sugar
60g unsalted butter
For the Apple and Caramel Filling:
100g eating apples
150g caramel (e.g. Carnation caramel)
For the Crumble Topping:
25g plain flour
15g unsalted butter
10g caster sugar
1/4 tsp mixed spice
Preheat an oven to 160C/140C Fan/ Gas Mark 3 and line a 18cmx18cm square cake tin with baking paper. In a bowl, make the shortbread by creaming together the sugar and butter until smooth. Add the plain flour and combine into a dough. Press into the tin and prick the base with a fork. Bake for 15-20 minutes until golden.
Meanwhile, make the apple and caramel filling. Peel the apples and cut them into 1cm cubes. Add to a pan and heat until softened, add the caramel and combine. Set aside and leave to cool.
Once the shortbread is baked, increase the oven to 180C/160C fan/Gas Mark 4. To make the crumble topping, rub the flour into the butter until it resembles breadcrumbs then stir in the sugar and mixed spice.
Place the crumble mixture on a baking tray and bake for 8-10 minutes until golden. Once baked, set aside to cool.
Layer the slices by topping the shortbread with the caramel mixture and finishing with the crumble topping. Place in the fridge for about an hour before cutting into 6 squares.
