Vegan Blood Orange Loaf
Hello there!
As requested by some of my friends I have decided to create a blog post of a recipe which I put on my Instagram account. I haven't had many vegan cakes, only brownies really, so I wanted to try a vegan loaf. I must say, this turned out brilliantly and I don't think anyone would know that it is vegan. I used blood oranges but if you can't get your hands on those then just normal oranges work great. What I have noticed from vegan baking recipes is that grated apple or applesauce is essential but it really isn't as hard as it seems so give it a go! Enjoy!

The Recipe: Vegan Blood Orange Loaf
Serves 8
For the sponge:
- 340g plain flour
- 2 tsp baking powder
- ½ tsp bicarbonate of soda
- 1/4 tsp salt
- 1 blood orange, zested and juiced
- 200g caster sugar
- 250ml unsweetened almond milk
- 125g vegan butter, melted and cooled
- 140g eating apple, skin on and grated
- 2 tsp apple cider vinegar
For the icing:
- 200g icing sugar
- 3 tbsp blood orange
juice
- 1 blood orange,
to decorate
Preheat an oven to 180°C/160°C fan/gas 4. Line a 2lb loaf
tin with grease-proof paper on the base and around the sides.
For the sponge, combine the flour, baking powder,
bicarbonate of soda, salt and orange zest in a bowl. In a separate
bowl, combine the orange juice, sugar, almond milk, melted butter, grated apple
and vinegar.
Combine the two mixtures by folding the wet mix into the dry
mix with a spatula. You should have a pale and thick batter.
Pour into the loaf tin. Bake for 50-55 mins, or until a skewer
inserted comes out clean. Allow the cake to cool a little then remove from
the tin and place on a cooling rack.
To make the icing, sieve the icing sugar into a bowl and add the
blood orange juice a little at a time. Combine with a whisk to form a thick and
smooth icing which is dropping consistency. Once cooled, drizzle over the loaf
and top with blood orange slices. Leave
to set and serve.
