Spiced Apple and Sultana Loaf

Hello there!
This is a really special cake that is perfect for a weekend treat. It has mixed spice, sultanas and apple in the sponge and is topped with orange buttercream and crisp dried apple. The grated apple gives the sponge a light texture. I made this cake in a loaf tin but you can make them as muffins instead. Enjoy!


The Recipe: Spiced Apple and Sultana Loaf with Orange Buttercream

For the sponge:


  • 175g butter
  • 175g muscovado sugar
  • 3 eggs
  • 1 eating apple, grated
  • 200g sultanas
  • 1 tsp baking powder
  • Pinch salt
  • 175g plain flour
  • 3 tsp mixed spice 


For the frosting:

  • 75g butter, softened
  • 150g icing sugar
  • 1 orange, zested
  • To decorate: crisp dried apple 

Preheat the oven to 180C/Gas mark 6 and line a 2 lb tin with grease proof paper. To make the sponge beat together the butter and sugar until light and creamy then beat in the eggs one at a time. Add the grated apple and sultanas. Also add the baking powder, flour, spice and a pinch of salt, mixing well. 

Spoon the mixture into the loaf tin (or muffin cases). Bake for 45 minutes (or 12-14 minutes for muffins) then turn the oven down to 140C/Gas mark 1, cover the loaf with foil and bake for a further 45 - 50 minutes. If you insert a skewer it will come out clean when the loaf is cooked. 

Put the loaf on a cooling rack and leave to cool while you make the icing. Cream together the softened butter and icing sugar until creamy and add the zest of one orange. Place the icing in a piping bag and pipe across the top. I did five swirls across the top and placed a piece of dried apple on each one.
