GF Banana Loaf with Chocolate Ganache

Hello there!
My last blog post of two gluten-free dessert recipes was popular so I wanted to do another gluten-free recipe which is ideal for meeting up with friends and family over Christmas. This banana loaf is coated with a glossy and rich chocolate ganache then topped with chopped mixed nuts. If you prefer to top it with something different like banana chips or sprinkles you can do that too. Enjoy! 

The Recipe: GF Banana Loaf with Chocolate Ganache

For the Sponge:
  • 100g softened butter or Stork 
  • 175g caster sugar
  • 2 eggs 
  • 2 ripe bananas
  • 225g gluten-free self-raising flour, sieved 
  • 1 tsp baking powder 
For the Ganache Topping:
  • 100g milk chocolate, broken into small pieces 
  • 100ml double cream
  • 50g chopped mixed nuts
Preheat an oven to 180C/Gas mark 4 and line a 2lb loaf tin with grease-proof paper. In a bowl, mash the bananas with the back of a fork until soft. In a large mixing bowl combine all the ingredients for the sponge together and combine with an electric hand whisk until smooth and well combined.

Place the mixture into the tin and smooth. Bake for 45 minutes until a skewer comes out clean, if it comes out with batter on it place back in the oven for an extra 5-10 minutes. 
Leave to cool in the tin for a little while then remove and leave to cool on a cooling rack.
Once cooled, remove the grease-proof paper and make the ganache. Heat the cream in a saucepan until nearly boiling and pour over the pieces of chocolate in a bowl. Leave to sit for a minute or so before stirring to allow the chocolate to melt. Mix until smooth and glossy then pour over the loaf dripping it down the sides. Scatter with mixed nuts and serve.
