Vegan Jackfruit Tacos

With many signing up to Veganuary, it only seemed fitting to do a vegan recipe. I really like Mexican flavours and find that tacos are such a versatile dinner since you can fill them with whatever you like. For these, we are going to be using jackfruit to replicate the texture of pulled pork. Jackfruit has become a lot more mainstream in recent years so you should be able to find it in most supermarkets in the tinned section. If you can't find it, you can use banana blossom or pulled mushrooms instead. These tacos are going to be a smoky barbecue flavour, topped with fresh salsa and avocado. Perfect if you are doing Veganuary! Enjoy!

The Recipe: Vegan Jackfruit Tacos

Serves 2

  • Vegetable oil
  • 1/2 white onion, sliced
  • 400g tinned jackfruit, drained and roughly chopped
  • 6 tbsp barbecue sauce 
  • 1 tsp smoked paprika
  • 200g mixed beans, drained 
  • Avocado, sliced 
  • Salsa
  • 1 lime
  • 6 taco shells (I used soft stand-and-stuff shells but you can use crunchy shells if you prefer)
  • Handful fresh coriander 

Preheat oven to 190C/170C fan/ Gas mark 5. In a frying pan, fry the onion in oil until soft and translucent. Add the jackfruit and heat through. Add the barbecue sauce and smoked paprika then combine to coat everything. Add the mixed beans and heat through whilst you prepare the rest of the ingredients. 

Meanwhile, place the taco shells on a baking tray lined with foil and place in the oven for 3-5 minutes until warmed through. 

Assemble the tacos by topping with jackfruit and bean mixture, sliced avocado, salsa, squeeze of fresh lime and fresh coriander. 

The jackfruit and bean mixture can be frozen and defrosted to have with future meals such as with nachos, rice or use it to make burritos.
