National Vegetarian Week - Creamy Pesto Veggie Pasta Bake

11th-17th May 2020 is National Vegetarian Week and since it is becoming common for people to reduce their meat consumption I wanted to do a vegetarian dish which is a crowd pleaser. The great thing about this recipe is that you can add whatever vegetables you like or have left in the fridge towards the end of the week, simply whip them all up together and bake to create a hearty and delicious dinner. I have been pescatarian for about a year and a half now but vegetarian meals have my heart over fish dishes (I eat fish as I don't mind the texture too much). Without further ado, let's get into the recipe! Enjoy!

The Recipe: Creamy Pesto Veggie Pasta Bake
Serves 4

250g dried pasta
2 tbsp sunflower oil
1 red onion, diced finely
2 garlic cloves, crushed and diced
300g chestnut mushrooms, sliced
2 courgettes, sliced
3 tbsp red pesto
3 tbsp cream cheese
Seasoning
75g mild cheddar cheese, grated


Preheat an oven 200℃/180℃ fan/Gas Mark 6. In a large saucepan, place the pasta in boiling water and boil for 10 minutes until soft.

Meanwhile, in a smaller saucepan, fry the red onion and garlic with a little sunflower oil until translucent. Add the sliced mushrooms and courgette and continue frying until soft.

Add the pesto and cream cheese to create a creamy pesto sauce. Add more pesto or cream cheese depending on what flavour you prefer. Once the pasta is cooked, add the pasta to the vegetables and stir through, season to taste.

Place in an oven dish and add grated cheese on top. Bake for 10-15 minutes until the cheese is melted and golden. Serve on its own, with salad or garlic bread.
