Couple Cooking Recipes

Hello there!
With Valentine's Day only round the corner I thought I would share some recipes which are perfect for making with your partner but also with close friends. All these recipes serve two people and are easy to personalise based on your food preferences. Enjoy and spread the love! xoxo


Recipe 1: Hot Dogs with Caramelised Onions
  • 6 pork or vegetarian sausages
  • 1 red onion
  • 1 tbsp oil 
  • 2 tbsp granulated sugar
  • 2 baguettes/hot dog buns 

Hot dogs with caramelised onions...ta dah!
Preheat your oven and cook the sausages according to the packet instructions. I chose to use vegetarians sausages which take 15 minutes at 200C/180C Fan. Whilst the sausages are cooking, prepare the caramelised onions by slicing the onion into thin strips and fry in a pan with oil until softened and then add the granulated sugar. If the onions start to stick to the pan just add a little boiling water to de-glaze the bottom of the pan. 
Once the sausages are cooked, add to the buns and top with the onions. Serve with salad if desired.


Recipe 2: Nachos with Salsa, Guacamole and Sour Cream 

For the nachos:
2 large/4 small tortilla wraps
Seasoning
1 tbsp smoked paprika
3 tbsp olive oil
50g grated cheese e.g. cheddar, mozzarella

For the salsa:
3 large salad tomatoes
1/4 red onion
1/2 tbsp white wine vinegar
Juice of 1/2 lime
Handful fresh coriander
1/2 tbsp garlic oil

For the guacamole:
One avocado
1/4 red onion
Juice of 1/2 lime
1/2 tbsp garlic oil
Chili flakes, to taste
Handful fresh coriander
Sour cream, to serve

Preheat an oven to 200C/180C Fan/Gas Mark 6 and line a baking tray with non-stick foil. Cut the tortilla wraps into triangles and place on the baking tray in one layer. Drizzle with olive oil and season with salt, pepper and smoked paprika. Place in the oven for 5 minutes until they start to go golden around the edges. Remove from the oven and top with cheese then place back in the oven for 2-3 minutes until the cheese is melted and golden.

To make the salsa, cut the tomatoes into quarters, remove the seeds and dice. To this, add 1/4 red onion that has been diced. Stir through the vinegar, lime juice, garlic oil and add chopped fresh coriander to taste.

For the guacamole, cut the avocado in half and remove the stone. Scoop the avocado away from the skin and chop roughly into small chunks. Add 1/4 red onion that has been diced, lime juice and garlic oil. Add fresh coriander and chili flakes depending on how spicy you like it. Once the nachos are cooked, serve with salsa, guacamole and sour cream.








Recipe 3: Quick Pizza (Inspired by: https://www.bbcgoodfood.com/recipes/no-yeast-pizza-dough)

For the pizza dough:
350g plain flour (plus extra for rolling out)
3 tsp baking powder
1 tsp salt
1 tbsp sunflower oil
170ml water

Toppings:
Red pesto/pizza base sauce
Cherry tomatoes
Grated cheese
Any other toppings e.g. chicken, mushrooms, olives

Preheat an oven to 200C/180C Fan/Gas Mark 6 and line two baking trays with non-stick foil or grease-proof paper.

Mix the flour, baking powder and salt together in a bowl. Add the oil and water and bring together to form a dough. If it is too dry, add a little more water.

Knead the dough on a floured work surface for about 5 minutes then split into two. Shape the dough into whatever shape you like. Place on the baking tray and add your toppings of choice. Bake for 15 minutes until golden around the edges.
