Valentine's Day Surprise Cookies

Hello there!
Valentine's Day is coming up so this recipe is one you can use as a gift for someone special or make these sweet biscuits with them. They have a very chocolaty flavour and tastes like a crumbly brownie!  I've called these "surprise cookies" as they have a few treats inside like hundreds and thousands and chocolate stars but you could put whatever you like inside them and decorate them however you like. All you need are some love heart cookie cutters and some decorations. Enjoy! 

The Recipe: Valentine's Day Surprise Cookies

Makes 32 single biscuits or 8 surprise biscuits

For the biscuits:

  • 250g butter 
  • 140g caster sugar 
  • 1 egg yolk
  • 2 tsp vanilla extract 
  • 50g cocoa powder 
  • 250g plain flour 

For the decorations:

  • White chocolate (for decorating on top and sandwiching the biscuits together)
  • Decorations for inside the cookies e.g. hundreds and thousands, chocolate stars etc

Preheat an oven to 180/160 fan/gas mark 3. Prepare several baking trays with grease proof paper.
In a bowl, cream together the butter and caster sugar with a wooden spoon until it's light and fluffy. Add the egg yolk, vanilla extract and briefly beat to combine before sieving in the cocoa powder and plain flour. I chose to add the flour and cocoa half at a time so it was easier to combine everything. At this point use your hands to make it into a dough ensuring the cocoa is evenly distributed throughout the mixture. Place in the fridge to firm up for about 10-15 minutes.

Roll out the dough to about the thickness of a one pound coin or slightly thinner on a lightly floured work surface. Cut out the dough with a large heart shaped cutter making sure that for every two whole hearts you have two that have the centres cut out with a smaller heart shaped cutter as this will form the surprise centre which will be filled with treats (each layered biscuits will contain 4 separate biscuits). 
Bake the biscuits in the preheated oven for 10-15 minutes until firm to touch. Leave to cool completely before decorating.

To decorate, place one whole heart on the base and then place two hearts on top which have the centres removed and glue them together with melted white chocolate. Fill the centre with treats and then add anther whole heart on top and drizzle with more white chocolate or decorate how you desire. I added a little red food colouring to my white chocolate so it went pink. Repeat until all the surprise cookies are made.
