Christmas Tree Tear and Share

I think we can all agree that Christmas this year is going to be a little different, but there is no reason why we can't have some wonderful festive food. This is a vegetarian Christmas tree tear and share, made of festive flavours like thyme, cranberries and mixed nuts. You can easily make it meaty by replacing the mushrooms with shredded turkey or you can make it vegan by using vegan pastry and use a plant-based milk with maple syrup, in place of the egg wash. The tree design is much easier to do than you may think and perfect for sharing with your close friends and family. Enjoy!

The Recipe: Christmas Tree Tear and Share

  • 15g butter
  • 1/2 red onion, finely diced
  • 2 garlic cloves, crushes and finely diced
  • 120g chestnut mushrooms, finely diced 
  • 4 sprigs thyme
  • 50g fresh cranberries
  • 2 tsp caster sugar
  • 50g chopped mixed nuts, plus extra for decoration
  • Seasoning 
  • 375g pack pre-rolled puff pastry
  • 1 egg, beaten 

In a saucepan, fry the red onion and garlic in the butter until softened. Add the mushrooms and cook further until all the water has evaporated. Add the thyme and fresh cranberries. Cook until the cranberries have softened then add the caster sugar and stir through the mixed nuts. 

Season to taste then place in a bowl and leave to cool. 
Pre-heat your oven to 200°C/180°C fan/Gas mark 4. 

Prepare the pastry by cutting the roll of pastry in half width ways. Place one piece on a lined baking tray and spread the mixture over the pastry in a triangle shape.

Place the other piece of pastry on top and mark the the shape of a triangle with a 6cm base. Gently score the tree down the middle and then cut lines every 2cm and twist each piece several times. Continue the process up the tree on both sides. 
With the excess pastry, cut out a star to put on top of the tree. Brush with egg and sprinkle topped nuts down the centre. Bake for 15-20 minutes until golden.
