Chocolate Orange Pavlova

Hello there!

What is the festive season without a chocolate orange?! This dessert is a light pavlova with a marshmallowy centre and crispy outside, topped with cream, melted chocolate orange and orange slices. What more could you want! The perfect pud to share with close family and friends, and the meringue can be made in advance and then decorated at the last minute. I wish you all a happy and healthy 2021, bye bye 2020! Enjoy!

The Recipe: Chocolate Orange Pavlova

Serves 8-10

  • 4 egg whites
  • 250g caster sugar
  • 1 tsp white wine vinegar
  • 1 tsp cornflour
  • 300ml double cream
  • 1 orange, zested then thinly sliced
  • 50g chocolate orange, melted
  • Decorations of your choice e.g. sugar snowflakes, chocolate curls

Preheat your oven to 150°C/130°C/Gas Mark 2 and line a tray with grease-proof paper (or, ideally a silicon mat if you have one). Mark out the circumference of a dinner plate and set aside.

Whisk the egg whites with a hand mixer until stiff peaks form. Gradually add the caster sugar, a little at a time, until the meringue is glossy and holds its shape.

Whisk in the white wine vinegar and cornflour. Spread the meringue onto the pre-lined tray, creating a dip in the centre so the sides are higher.

Bake for 45 minutes to 1 hour, then turn the oven off and leave the pavlova to cool in the oven.

Whip the double cream until it forms soft peaks and spread over the meringue when completely cool. Top with orange zest and slices, melted chocolate orange and decorations of your choice.
