Raspberry, Lemon and White Chocolate Muffins

Hello there!
It is Mother's Day this Sunday and these muffins are perfect to make for a mum, grandma or anyone that is like a mother to you. They are filled with flavour with the fruity raspberries complementing the creamy white chocolate. Enjoy!

The Recipe: Raspberry, Lemon and White Chocolate Muffins

Makes 12

  • 250g self-raising flour
  • 1 tsp bicarbonate of soda
  • 140g caster sugar
  • 85ml sunflower oil
  • 2 eggs 
  • 150ml milk
  • 150g raspberries
  • 100g white chocolate chips
  • 1 lemon zest
  • 1/2 lemon, juiced
Preheat an oven to 180C/Gas Mark 4 and line a few muffin tin with paper cases. Place all the dry ingredients in a bowl (flour, sugar and bicarbonate of soda) and combine. 

Beat the eggs in a measuring jug then add the oil and milk in the jug. Combine the wet ingredients with the dry ingredients and mix well with a wooden spoon. 

Add the raspberries, white chocolate chips, lemon zest and lemon juice. Mix well then spoon the mixture into the paper cases. Before baking, wipe any mixture that may have landed on the tray as it will burn when in the oven. 


Bake for 15-18 minutes until risen and golden. Leave to cool on a wire rack or serve slightly warm.
