Tomato and Prawn Tagliatelle

Hello there!
It is Valentine's Day next week so I wanted to make a recipe that is a great dinner for couples or even just a meal for the family. The rich tomato sauce goes well with the prawns, spinach and tagliatelle. I thought it would be nice to design a Valentine meal since I've made lots of desserts before which would go well with any meal. You could even recreate the well-known Lady and the Tramp scene with the tagliatelle! Enjoy!

The Recipe: Tomato and Prawn Tagliatelle
Serves 2
  • 1/2 onion, diced
  • 2 garlic cloves, crushed
  • 400g tin chopped tomatoes
  • 200ml vegetable stock
  • 2 tbsp tomato puree
  • Seasoning
  • 150g cooked prawns
  • 2 large handfuls spinach
  • Handful plum tomatoes 
  • Handful basil
  • 150g tagliatelle


In a saucepan, fry the diced onion in a little oil until softened and then add the crushed garlic. When soft, add the chopped tomatoes, vegetable stock and tomato puree. Bring to a simmer and leave for 20-30 minutes until the sauce has reduced. Season with salt and pepper.

Once the sauce has reduced, add the prawns and plum tomatoes to the sauce. Leave on a low heat so the prawns warm through while you boil the tagliatelle in another saucepan for 10 minutes. 

When the pasta is nearly cooked, add the spinach to the prawn mixture so it wilts down. Drain the pasta and combine with the sauce.
