Stuffed Peppers

Hello there!
I wanted to make a healthy dinner which is fairly simple to make but filling. These peppers are stuffed with an Italian-style rice which includes basil, tomatoes and chicken. I topped my peppers with a sprinkle of grated cheese. You can add different flavours such as olives or even stuff them with couscous instead. Enjoy!

The Recipe: Stuffed Peppers


Serves 2


  • 2 large red peppers
  • 1 onion, diced
  • 1 garlic clove, crushed
  • 150g rice
  • 1 vegetable stock cube 
  • Handful cherry tomatoes, cut in quarters
  • 2 tbsp tomato puree 
  • 1 chicken breast, cooked
  • Handful basil
  • Handful grated mozzarella 


Preheat an oven to 180 C/Gas mark 4, place foil in a baking tray. Heat a saucepan with a little oil and fry the diced onion. Once the onion is soft, add the garlic and tomatoes. Add the rice and enough vegetable stock to just submerge the rice. Leave to boil for about 10 minutes until the rice is cooked. While the rice is cooking, cut the tops off the peppers. 
Cut the tops of the peppers into small pieces to add to the rice. Add the basil, chicken and extra pepper to the rice and stir in the tomato puree. 
Place the rice in the peppers and sprinkle with mozzarella cheese and bake in the oven for about 20 minutes or until the peppers are soft. If the cheese begins to burn place foil on the top of the peppers and serve when hot.
