Chocolate Orange Oat Cookies

Hello there!
Biscuit recipes seem to always be popular on my blog so I thought an oat cookies recipe would be ideal. I really like oats in cookies since they add a nice chewy texture and the chocolate-orange flavour combination is still quite light. The orange makes the chocolate less over-powering, especially since some cookies can be very rich. A very simple and quick recipe, while easy to adapt. Enjoy!

The Recipe: Chocolate Orange Oat Cookies

Makes 12-14

  • 100g butter, softened
  • 100g light brown sugar
  • 1 egg
  • 1 orange, zested
  • 100g plain flour
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 100g rolled oats
  • 100g chocolate chips (plus 50g to drizzle on top)

Preheat an oven to 180C/Gas mark 4 and cover two baking trays with grease-proof paper.

In a bowl, cream the butter and light brown sugar with a wooden spoon until light and creamy. Beat in the egg and add the orange zest. In a separate bowl, combine the flour, salt, baking powder and oats. Add the dry ingredients to the other mixture, mix to combine the two.
Add the chocolate chips, then place tablespoon sized amounts of the mixture on the baking trays. Place them about 5cm away from each other but they won't spread a huge amount. Place in the preheated oven for 15-20 minutes, until golden brown. Melt the extra chocolate in the microwave and drizzle over the cookies when cool.
