Chicken and Mushroom Stew

Hello there!
This is one of the easiest dinners to make when you want a warming and filling meal for the family. The herbs give the stew a really nice flavour that goes well with roasted or mashed potatoes and seasonable vegetables. Alternatively, this would make a lovely filling for a pie. Enjoy!


The Recipe: Chicken and Mushroom Stew

Serves 2

  • Brown onion, diced
  • Garlic clove
  • 2 tbsp butter
  • 2 chicken breasts
  • 250g mushrooms, sliced 
  • 1l chicken stock 
  • Sage (dried or fresh)
  • Dried mixed herbs 
  • 3 tbsp cornflour 
  • Seasoning 

In a large saucepan fry the diced onion and garlic in butter until soft. 

Cut the chicken breasts into small chunks and add to the saucepan. Sprinkle with 1 tablespoon of cornflour and cook it off before adding the chicken stock and mushrooms. 

Season with salt, pepper and all the herbs. To thicken the sauce, add the rest of the cornflour to a little water and stir in well. 

Leave the stew to simmer for about 20 minutes, until the chicken and mushrooms are cooked through. Serve with mashed or roasted potatoes.
