Super Easy Fish Pie

When you want to spend time with family or friends you sometimes need a meal that is easy to make but will still fill everyone up. This fish pie is a fantastic dinner for mid-week and doesn't take very long to make before it is heated up in the oven, ready for dinner time. You can easily add your favourite fish or even add more vegetables like peas or cabbage that go wonderfully with this creamy dish. Enjoy! 


The Recipe: Super Easy Fish Pie

Serves 4-6

  • 390g fresh fish (most supermarkets sell a fish pie mix)
  • 150g king prawns
  • 1.5kg mashing potatoes
  • 1 brown onion, diced
  • 4 tbsp margarine/butter (extra for mash topping)
  • 50g plain flour
  • 3/4 pint milk
  • Handful mild cheddar cheese, grated 
  • Salt and pepper

Preheat oven to 200C/Gas Mark 5. Peel and chop up the mashing potatoes and place in a large saucepan with boiling water and boil for about 20 minutes or until the potatoes are soft enough to be mashed. 

While the potatoes are boiling, place the onion in another saucepan with a little oil or butter and fry until soft. Add the tablespoons of margarine or butter and stir until melted. Add all the flour in one go and stir continuously with a whisk for several minutes on the heat to cook out the flour. Add the milk a little at a time, whilst constantly whisking, and bring up to a boil until the sauce thickens and is lump-free. 

Take the pan off the heat and add a handful of grated cheese, season with salt and pepper and add all the fish. Place back on the heat to bring back up to temperature, and to ensure the cheese has melted, then place all the fish mixture in an oven-proof dish. Once the potatoes are cooked and soft, drain and mash with a little butter. Spoon the mashed potato on top of the fish mixture and place foil on top of the dish.

Place in the oven for 10 minutes with the foil then remove it and continue cooking for a further 20 minutes or until the mash potatoes is a light brown and the fish mixture is bubbling. Ensure it is steaming hot and serve with vegetables of your choice.
