Strawberry Cheesecake Muffins

Hello there!
My favourite dessert when heading towards the summer is definitely cheesecake. Saying that, I do love cake so why not combine the two. These muffins have all the same flavours as a normal strawberry cheesecake but in a muffin. The sponge has fresh strawberries in, with a cream cheese filling and a crumble mixture on top with the same texture as the biscuit base of a regular cheesecake. Certainly an impressive treat for a party or afternoon tea. Enjoy!


The Recipe: Strawberry Cheesecake Muffins

Makes approx. 15


For the crumble topping:


  • 75g soft light brown sugar
  • 95g plain flour
  • 90g unsalted butter

For the muffins:


  • Approx. 12 medium strawberries 
  • 2 eggs
  • 125ml vegetable oil
  • 250ml semi-skimmed milk
  • 200g caster sugar
  • 400g self-raising flour
  • 2 tsp vanilla extract 

For the cheesecake filling:

  •      250g cream cheese
  •      2 egg yolks
  •      2 tsp vanilla extract
  •      5 tbsp caster sugar 




Heat an oven to 200C fan/gas 6. Line 2 muffin trays with cases. To make the crumble mixture, stir together the brown sugar and flour then cut in the butter and mix with a folk. It should resemble coarse crumbs.

In a large bowl beat the eggs and then add the oil and milk. Add the sugar then beat until smooth. Sift in the flour and add the vanilla extract. Chop up the strawberries into small pieces then stir them into the batter. Try and cut the strawberries quite small otherwise they might sink to the bottom of the sponge.
To make the cheesecake filling, beat the cream cheese until smooth then add the egg yolks, vanilla extract and sugar until combined.

Place a few spoonfuls of the strawberry muffin mixture into a muffin case then a layer of cheesecake filling. Add more strawberry muffin mixture to fill up the case. Sprinkle the crumble on top generously and press into the muffin a little so it sticks. Bake for 5 minutes then lower the temperature to 180C fan/gas 4 and bake for 15-20 minutes until golden.
