Super Easy Granola

Hello there!

Like some people I'm not a massive fan of breakfast, I would much rather spend more time preparing for lunch or dinner. However, this easy peasy granola changes everything! It only takes about half an hour and can be made in a large batch and kept in an air tight container for breakfast every morning. This granola recipe is deliberately quick plan so that different fruits, dried or fresh, can be added last minute in the morning. Just like many of my other recipes, it is simple to adapt. Enjoy!

The Recipe: Super Easy Granola

    • 225g (3 cups) rolled oats
    • 30g (1/4 cup) chopped mixed nuts
    • 30g (1/2 cup) desiccated coconut
    • 30g (1/2 cup) sunflower seeds
    • 2 tbsp "super food" - e.g. chia seeds, hemp, goji berries and lucuma
    • 55g margarine
    • 100g honey

Preheat oven to 160C/Gas 3 and in a large bowl mix all the dry ingredients. In a mug heat the honey and margarine in a microwave on 800 Watts for around 50 seconds until the margarine has completely melted.

Pour the margarine and honey mixture into the dry mixture and stir until all the oats are covered. Spread the mixture out on a baking tray lined with grease-proof paper in one evenly layer and place in the preheated oven for 20-25 minutes. Every 5-10 minutes take the granola out of the oven and stir it then return it back to the oven. Bake until the mixture is evenly golden.

Once cooled, place the granola in an air tight container. I like to add sultanas when I have it for breakfast but it would also be very yummy with fresh fruit or berries.

    Super Easy Granola...Ta dah!
