3 Sweet Pancake Recipes

Hello there!

Looks like it's finally heading towards Spring and Easter! It was Pancake Day on the 28th February so these are a few of my favourite ways to enjoy pancakes. You could have any of these as a sweet dessert or adapt them for breakfast. I really enjoyed making the mini pancakes by piping them as they are so easy, quick and super cute with fruit. The caramel sauce is also so simple and can be made for other recipes too. Enjoy!


The Recipe: Basic Pancake Batter

Makes 6-8 pancakes


  • 200g plain flour 
  • 1 1/2 tsp baking powder
  • 3 tbsp caster sugar
  • 200ml milk 
  • 1 large egg, lightly beaten
  • 3 tbsp melted butter 

In a large bowl, sieve the flour and baking powder then add the caster sugar. Mix the dry ingredients together thoroughly before making a well in the middle. Crack the egg into the milk in a measuring jug and beat a little with a folk before adding to the dry ingredients a small amount at a time. Melt the butter in the microwave, then add and keep beating with a whisk until you have a smooth batter. Your basic pancake batter is now ready!

Pancake Recipe 1: Hazelnut and Caramel Pancakes


  • 30g light brown sugar
  • 30g butter
  • 25ml double cream
  • Handful of chopped hazelnuts


This is more about the toppings so the pancakes are plain but you still get lots of sweet and creamy flavour from the caramel sauce. I find putting the batter into a measuring jug the easiest way to get even sized pancakes. Make sure you grease the pan with a little butter and cook the pancakes on a medium heat, flipping them when bubbles appear on the surface of the pancake. 

While the pancakes are cooking, make the caramel sauce by melting the sugar and butter in a pan over a medium-low heat until the sugar has dissolved. Ensure you keep an eye on it in case the sugar burns. Once dissolved, add the cream and stir until a thick caramel sauce is formed. When all the pancakes are cooked, sprinkle them with a handful of chopped hazelnuts and drizzle with the caramel sauce. Yum!



Pancake Recipe 2: Lemon, Raspberry and White Chocolate Pancakes


  • 1 lemon, zested
  • 50g white chocolate chips
  • Handful of fresh raspberries

For this recipe the pancakes will be cooked in the same way as the recipe above but some flavours are going to be added to the batter beforehand. Add the white chocolate chips and lemon zest to add a sweet and creamy flavour. Cook the pancakes in the same way as above and top with a handful of fresh raspberries. Simple!

Pancake Recipe 3: Mini Fruit Pancake Skewers



  • Skewers/cocktail sticks
  • Piping bag
  • Fresh fruit e.g. raspberries


I think these are so cute and they are so simple to make. Place some of the pancake batter into a piping bag, ensuring all the air has been squeezed out. Gently pipe the batter in circles, about the size of a two pence coin or slightly larger, and cook just as you would a larger pancake. 
Leave the mini pancakes to cool slightly and repeat until you've ran out of batter. When cooled slightly, place two mini pancakes on a cocktail stick/skewer that is sandwiched with fruit e.g. raspberries or banana. I drizzled my mini pancakes with some caramel sauce that was left over but they could be topped with melted chocolate or just left plain. Easy!
