Avocado Pesto with Sausages and Pasta

Hello there!
It's slowly heading towards Spring so I this recipe is healthy and has fresh flavours. I really like avocados as I find they have a creamy but fresh flavour so I'll be sharing with you how to make an avocado pesto which I will be serving with pasta and chunks of sausage. I prefer to remove the skins off the sausages and roll them into small meatballs so they're less chewing and allows them to soak up more of the flavour from the pesto, however, you could easily substitute prawns or chicken for the sausages. The pesto is just as easy as making a classic basil pesto and has similar flavours but is much more special and creamy. Enjoy! 

The Recipe: Avocado Pesto with Sausages and Pasta

Serves 2


For the avocado pesto:

  • 1 ripe avocado
  • 1 large handful basil leaves
  • 1 large tbsp grated Parmesan cheese
  • 2 garlic cloves, roughly chopped 
  • 1/2 lemon, zest and juice 
  • 1 large tbsp pine nuts
  • 3 tbsp olive oil
  • 3 tbsp water (add more if needed)


Other ingredients:

  • 150g pasta
  • 4-6 sausages (skins removed and rolled into meatballs)


To make the pesto you simply place all the ingredients for the pesto in a blender or a food processor and blitz. Start by cutting the avocado in half then remove the stone and scoop it out. Place all the ingredients in the blender and blitz until smooth but if it's too thick just add a little more water. You should be able to spoon it out easily and it very slowly fall off a spoon. 
Once the pesto is ready put it to one side and prepare the sausages and pasta. Gently cut down the centre of the sausages length-ways so you can remove the skin and roll them into meatball pieces. Add them to a small saucepan with a little oil and cooked them through thoroughly while the pasta is cooking. Place the pasta in a saucepan with water and boil for 10 minutes.

Once the sausages have browned and the pasta is cooked, place them both in the same saucepan with the pesto and heat through thoroughly before serving.
