Chocolate Brownie Christmas Trees

Hello there!

It's Christmas!!! I couldn't not do a post just for this time of year so here is a cute recipe for not just normal chocolate brownies but...Christmas tree brownies!! They are perfect for everyone but particularly young children because of the colourful decorations. I hope you enjoy them and have a very Merry Christmas and a Happy New Year! Enjoy!

The Recipe: Chocolate Brownie Christmas Trees (Makes 15)


For the brownies:

  • 200g dark chocolate (I used 70% cocoa solids)
  • 175g unsalted butter
  • 325g caster sugar
  • 130g plain flour
  • 3 eggs



Preheat the oven to 170C/Gas 3 and grease a 33 x 23cm baking tray with grease-proof paper. Break the chocolate into small pieces and place it in a heatproof bowl over a saucepan of simmering water with the butter and heat until melted and smooth. Remove from the heat and then add the sugar and stir well. Don't worry if it's looking grainy at this point, it will be smooth once you add the rest of the ingredients. Add the flour and then eggs and mix until thick and smooth. 

Spoon the mixture into the baking tray and bake for about 30-35 minutes until the top looks a little flaky but still a little soft in the centre. Once baked, leave for a little while to cool before putting on a chopping board ready to cut into triangles. I found the easiest way to do this is to first cut it into three while it's landscape and then do lines diagonally until you get triangles. I had a little wastage from the ends but not too much and I ended up with 15 triangles. Make sure you use a sharp knife so the brownies have clean edges and don't fall apart. Leave on a cooling rack to go cold.


For the icing:

  • 125g icing sugar
  • 40g unsalted butter 
  • 12ml milk 
  • A couple drops of vanilla extract 



While the brownies are cooling, beat the icing sugar and butter together with an electric mixer or beat them together by hand until smooth. Add the milk a little at a time when the icing gets stiff and add the vanilla extract and beat well. Beat until the frosting is light and fluffy, then place in a piping bag with a flat nozzle making sure all the air is squeezed out.


Decorations:

  • Orange flavoured matchmakers (for the tree trunk)
  • Hundreds and thousands (as the baubles)
  • White chocolate stars (star on the top of the tree)

To decorate, I first halved the matchmakers and then stuck them into the brownies so they had a trunk like a tree. With the icing I did a tiny blob on the top of the tree to stick a white chocolate star to before doing the rest of the icing. I did the icing so it looked like tinsel going around the tree and then added hundreds and thousand before the icing dried to make it look like baubles. 
This is how I chose to decorate mine but you could add other things like snowflake sprinkles or just red and white sprinkles or even something a little different like popping candy for a different texture. It's up to you! Hope you enjoy these Christmas treats.
